4 serving size Lime Jell-O (small package)
1c. Water
15 oz. Pear slices, canned, drained,
4 oz. Cream cheese
1/2 c. Lemon-lime soda (Sprite, 7-Up, etc.)
1/4 c. Pecans, chopped
1 c. Cool Whip

Boil water in microwave in a 4 c. measuring cup. Add Jell-O and stir well. Cook on high for another minute or two, until Jell-O totally dissolves. Pour into a 9 inch pan.2
In food processor or blender, mix well-softened cream cheese and 1/2 c. soda until smooth. Add pears and grind until pears are in 3/4 inch chunks. Do NOT over grind. Add to Jell-O, and stir until cream cheese is blended into Jell-O.3
Add pecans to Jell-O mixture. Fold in Cool Whip. Chill until firm, approximately 4 hours. Serve with other green foods, such as spinach pasta and pesto, or broccoli soup, for St. Patrick's Day. It's also good with a traditional corn beef and cabbage.Tip
