When I was a little girl, Saturday mornings were always a special time. Usually, this meant a trip down to the local diner for breakfast. I ordered the same thing continually: pancakes with strawberries and whipped cream.

Of course, you have to be extremely careful about how long you allow the pancake mix to set before you actually cook it. Otherwise, you end up with dehydrated strawberry pieces that are crunchy instead of moist. (We found this out one morning, much to our disappointment!) The heat setting you use to cook the pancakes and waffles is also important, as the strawberry bits can scorch if they are cooked over too high of a temperature.
To add an extra amount of strawberry flavor, I usually chop up fresh strawberries to serve the pancakes with, plus add a dollop of whipped cream. Thawed frozen strawberries also work well.
As for the cost, there are many other comparable strawberry mixes on the grocery aisle shelves at a much lower price. However, the basis for Stonewall Kitchen Pancake & Waffle Mix is worth the cost, without the strawberry bits included.
