Ingredients:
½ kg rice
1 spoon of turmeric
7 spoons of refined oil
4 nos lemons
Salt to taste
3 spoons of Channa dal
3 spoons biri dal
6 to 7 green chilies,
1 small ginger
Few curry leaves
1 spoon small mustard
2 pinch of Asofoetidia
How to cook
This is meant for a family of four. Take ½ kg rice; put it in the cooker after washing it well. Add 1 liter of water to the rice and cook as normal rice. After two wishel, switch off the cooker. Once cooked take out the rice in a flat basin.
Add 1 spoon turmeric and 3 spoons of refined oil to the cooked rice and stir the cooked rice well.
Take a small bowl, cut 4 lemons and squeeze it and take out the pulp. Add salt to taste in to the bowl. Now mix the lemon juice and salt well, so that salt is dissolved in to the lemon juice.
Then add this mixture to the cooked rice.
Garnishing
Take a small pan, add 3 to 4 spoons of refined oil and heat it on the gas. Take 2 to 3 spoons of channa dal, 2 to 3 spoons of biri dal, 6 to 7 green chilies cut in to pieces. 1 small ginger and cut in to pieces. 3 to 4 curry leaves. 2 pinch Asofoetidia and spoon of small mustard.
Fry till brown red and add to the cooked rice , mix it well and serve it hot.
Jayanti Sweet Sujee cakes
This is a sweet dish made in eastern parts of India. It is specialty is that any one can have it including diabetic patents.
Ingredients:
1 liter refind oiled
3 to 4 cardamoms, powdered
4 to 5 black pepper powdered
1 full coconut grated
½ liter water
Process
First take ½ liter water in a vessel and boil it. Add pinch of salt and 2 spoons of oil to it. When water starts boiling, sim the gas and start adding sujee slowly and stir continuously .make sure that to mix the sujee well with water, without leaving uncooked lumps.
For Sweetening
Take the coconut grated and put on the gas. Add the sugar to it. Add cardamoms powder and black pepper powder and go on stirring. When sugar and coconut starts binding and becomes brownish in colour. When you see that the two are sticking the pan, put off the flame.
Now make balls of sujee 15 to 20 numbers, which is already cooked. Put some oil on your palm and make these balls so that sujee does not stick on your palm. Then make these balls in the oval shape. Put coconut, sugar garnish in to the oval shaped balls and close the balls.
Since sujee is a good binding agent it will hold the coconut sugar firmly.
For finial touches , Take the 1 liter oil in a frying pan and heat it on a gas, when the oil is full hot, put these oval shaped balls 5 to 6 at a time in the oil deep fry it. Then sim the gas. Once the gas becomes golden brown take it out and serve it hot.
This is a very good welcome cum thanksgiving dish, can be shared with friends.
