Yes, cut the roast to make three meals. If you don't you'll end up working with a cooked roast to come up with new meals and it's easier to just cut what you need and freeze it to make new meals if you're not skilled in the art of creating new meals from old meals. The size of the roast will depend on how many different meals you can actually get out of it and how many people you're feeding.
The price of the roast will be a determining factor in whether it's beef or pork. Either way you can get three meals out of one roast. (I usually wait until the double packs of roast go on sale in case I'm in the mood for more than just roast.) Of course the smaller the family the less you'll have to cut from the roast and the farther the cutting will go.
Cutting the end off the roast and slicing it into tiny pieces gives you meat for stir fry or stew. That's two meal ideas right there. For stir fry you can cheat and buy a bag of frozen stir fry vegetables to put with the meat. For stew you simply need potatoes, carrots, onions and whatever other vegetables and seasonings you wish to have to go with the meat in your stew.
You can even cut off strips to deep fry if you like. The possibilities are endless when it comes to feeding your family three times with one roast with a little imagination and willingness to do some work in the kitchen.
You can also cut slices from the roast to have steaks or pork chops. (No it won't taste the same but people get tired of the same meats the same way all the time.) Once you have these cut you can prepare them however you prefer them to be cooked regularly along side your favorite sides.
Then if the roast was big enough and it should be if you bought the family size roast you have enough roast left to feed a small family an actual roast. You can put it in the oven with potatoes and carrots or make gravy over it using some canned soup and soup mix. The grease that comes out of the roast will assist the gravy.
Cutting the roast and making various meals will often end up costing you less than buying the various pre-cut meats at the grocery store provided that you have watched the prices. You have five meals right here if you're willing to take the time to cut the roast before you stick it in your freezer and you've saved some money as well.
