Stuffed Green Pepper Soup Recipe
Fall is a Great Time to Make This Soup Using Up the Last of the Garden Harvest!
Stuffed Pepper Soup
1 lb. ground beef or turkey
½ cup onion, chopped
1 large green pepper, cut into strips
1 cup instant rice, white or brown
1 jar of spaghetti sauce, 22 oz (or tomato sauce)
1 jar of water, use empty sauce jar
1 ½ t salt
1 t ground pepper
1 t oregano or Italian spices
In a skillet brown the meat, adding the onions and green peppers to cook also. Drain the excess grease from the browned meat and vegetables. Add the cooked meat and vegetables to a Dutch oven or soup pot. Add rice, sauce, water and spices.
Bring to a boil and reduce heat to simmer for 10 to 20 minutes for the rice to cook and the flavors to blend.
Serves 6 to8
Add fresh bread or rolls and butter for a very satisfying meal.
This soup may be frozen to enjoy at a later date.
If somehow you had a few leftover stuffed peppers...although I don't see how that would ever happen...you could just smush them up and prepare this soup by adding the tomato sauce, broth and spices and simmering as directed.
If you enjoy stuffed peppers you will enjoy this soup as well. It is much faster to prepare yet brings you the same great taste.
