Stuffed Pepper Soup Recipe

A Quick and Easy Meal that Your Family Will Love

A family favorite in my house is Stuffed Pepper Soup. This is a thick hearty soup that is perfect for those cold winter days when your family wants something to stick to their ribs. Make sure you make plenty as this is one dish that will not go to waste or find itself in the back of the fridge.

Ingredients:

1 package Italian sausage with casing removed (hot Italian sausage gives more flavor but base this on your families taste)

2-3 large green peppers diced.

1 large onion diced

64 ounce can of tomato juice

1-2 cloves of fresh garlic or 1 tablespoon of minced garlic

1 cup of instant rice

Spices for flavor such as Italian seasoning, garlic powder, chili powder, salt, pepper, be creative with this

Brown Italian sausage and (break it up like you would hamburger for chili or spaghetti sauce) with garlic, green peppers and onions. Pour into large soup pan, add tomato juice and spices.

Cook on medium heat for about 1 hour or until onions are transparent and green peppers are fully cooked, stirring often as the juice can burn if not watched.

Add rice and turn heat to low. The soup will remain thin until the rice is added, don't worry it will thicken up quickly. Set simmer for 20 minutes and serve with warm bread or crackers and a green salad.

Serves 2-4 depending on appetites.

You can substitute cabbage for the peppers or hamburger for the Italian sausage, though I find the Italian sausage gives a much better flavor.

This dish can be a bit too bland if you don't season it well. My preferred seasoning is a teaspoon of seasoning salt, Italian seasoning, pepper and yes sometimes even a teaspoon of chili pepper. Test for taste as you go. Remember until you get the flavor you want, less is truly more in this dish.

If you want to get really fancy. Get some pre-made bread dough and make bread bowls to serve the soup in and then sit back and enjoy to compliments from your family.
