Ingredients

Serves 4
4 Squash
1/2 Lb. Lean Ground Beef
2 cups Barley(organic if possible)
1/2 Onion
1-2 Garlic cloves, finely minced
1 Tbs. Olive oil
2 cups Beef Stock
to taste Salt and Pepper
2 cups Mozzarella Cheese
2 Tbs. Parmigiano Cheese

Directions for Stuffed Squash

Squash prep.
Wash the Squash and cut it in the middle. Take all the seed out.

Boil the Squash
Instead of roasting the veggie, try to boil it in the lightly salted water for about 10-15 minutes

Stuffing Prep.
On a hot olive oil add finely minced onion and garlic. Saute for a few minutes, and add barley. Let the barley toast a bit and than add the ground beef. Once the beef is lightly brown add beef stock. Put some salt and pepper.

Stuff the Squash
Drain the squash and put some salt and pepper. Take a few spoons of stuffing and place it in the squash. Sprinkle Mozzarella and Parmigiano Cheese on top.

Bake
Turn the oven on 375F and bake for about 30 minutes or until the squash and the stuffing is golden brown.

    I may have to try this recipe...sounds very yummy. I just made some squash soup the other day and it was awesome, so I am pretty sure this recipe is going to be great.

    The yummiest! Saving! I am quite far behind in reading articles here. My husband had a surprise total knee replacement on the 14th. Then off to a rehab center. He made it home on Christmas Eve! I have been running ragged since the 14th! Hopefully, life will get back on track soon! Happy New Year! :)
