Stuffed Zucchini Recipe

If you've ever grown zucchini in your garden, you know that even one plant can produce so much produce that it's hard to know what to do with it all. This healthy zucchini recipe is a delicious meal that incorporates familiar and delicious Italian flavors with this tasty squash. Stuffed zucchini is a favorite at our house, and hopefully it will be soon in yours.

Ingredients:
1 lg. or 2 sm./med. zucchini
1 lb. lean ground turkey
Italian spices, salt, & pepper
1 jar of tomato sauce, any variety
1 cup of shredded mozzarella cheese

Directions:
1. Preheat the oven to 375°. Brown the ground turkey and drain. Add the spices, salt, and pepper, and let cook for a few minutes to incorporate the flavors. Add enough sauce just to coat the turkey and let cook on low.

2. Meanwhile, slice the zucchini lengthwise and scoop out the seeds, making 2 or 4 long "boats." Smooth a thin layer of sauce on the bottom of a 9" x 13" pan, and arrange the zucchini on top.

3. Spoon the turkey mixture inside the scooped-out zucchini halves, piling high. If some falls beside the zucchini into the dish, that's fine. Sprinkle the tops with the mozzarella cheese.

4. Bake for 20-25 mins. until the zucchini is tender and the cheese is melted and bubbly.

Makes 4 to 6 servings.
