Nearly 21 million people in the US have diabetes, so sugar free is a must. Here's a wonderful sugar free recipe. Its simple and delicious. It can be used for a special brunch for children and adults, or even as a sumptuous sugar free dinner party dessert!

Sugar Free Chocolate Melba Sandwiches

Ingredients to serve four (though you might need more!)

8 slices of white bread - sandwich or toast bread works best.
150 g sugar free chocolate
1 very ripe banana
1 egg
200 ml milk

Butter for spreading and for shallow frying.

To serve:

Fresh cream or cream fraiche
Hershey's Sugar Free Chocolate Syrup.
Chopped nuts

Method

Remove crusts from bread with a sharp knife.

Lightly butter one side only of four slices of bread.

Mash banana

Spread banana on to two slices of bread Grate chocolate on top
Put a slice of unbuttered bread on top to make a sandwich. Press down firmly

Grate chocolate on to the other two buttered slices of bread. Grate chocolate on top . Put a slice of unbuttered bread on top to make a sandwich. Press down firmly.

In a shallow dish mix together the egg and the milk.

Heat a frying pan to medium. Add a knob of butter.

Dip both sides of the sandwiches in the egg and milk mixture. Place in frying pan and shallow fry for about a minute on each side.
Remove from the pan. Wait another minute then cut the sandwiches into fingers or quarters.

Garnish with a dollop of cream of cream fraiche and sprinkle with nuts. Top with a little Hershey's Sugar Free Chocolate syrup.

Serve to eager guests
