Sugar Free Graham Cracker 9" Crust:
1-1/2 cups crushed sugar-free graham crackers (1 wrapped package)
3 tbsp. Splenda
1/3 cup real butter (melted)
Heat the oven to 350 degrees. Mix the graham cracker crumbs and sugar in a bowl. Add melted butter; mix thoroughly. Spray a glass 9" pie plate with Crisco, no-stick spray-butter flavor. Press graham cracker mixture firmly and evenly against bottom and sides of pie plate. Bake 10 minutes and let cool. You can use a prepared graham cracker pie crust; however, it will add a few grams of sugar per serving.
Sugar Free Chocolate/Butterscotch Creme Pie filling:
In a large bowl, combine:
2-3/4 cups cold 2% milk
1 pkg. (1.4 ozs.) Jell-O sugar free-fat free instant chocolate flavor pudding mix
1 pkg. (1.4 ozs.) Jell-O sugar free-fat free instant butterscotch flavor pudding mix
Stir with a wire whisk for 2 minutes. The pudding mix will be thick. Pour immediately into cooled 9" graham cracker crust. Cover and seal the pudding top with Saran Wrap (or equivalent) and chill in the refrigerator for two hours. The Saran Wrap prevents a "rubbery" top from forming on the sugar free chocolate/butterscotch filling.
Topping:
Just before serving, remove the Saran Wrap and cover the top of the pie with a small tub of sugar-free Cool Whip. It is better to remove the serving slices with a pie server as the crust may crumble.
One 9" Sugar free chocolate/butterscotch pie makes 8 servings and it is rich enough that one piece satisfies a hearty man or a teen-age boy! It is also pretty enough to serve guests, especially with chocolate syrup "drizzled" over the cool whip. My grandson once commented, "I found the chocolate; I found the creme; now where is the pie? This is wonderful!"
One serving has 13 grams of fat and 3.5 grams of sugar. If you use Liquid Butter Buds and no-fat milk you can cut down on the fat and the sugar content - but it is just not as good!
