Sugar Free Cookie Recipes

Whether you're dieting and want an occasional sweet snack, have medical concerns that require you to cut down on sugar, or simply want to reduce your daily sugar consumption, sugar free cookies can provide a welcomed treat. Additionally, creating your own homemade varieties allows you significant advantages over buying them from the supermarket. These include being able to choose the ingredients that will go into the cookies, enjoying greater freedom from consuming preservatives, dyes, and other unwanted items that get added to treats you buy at the supermarket, and being able to control your portion sizes as you make your cookies larger or smaller to suit your own particular needs and preferences.

Here is an easy basic recipe that takes under ten minutes to bake and is delicious and satisfying:

1/2 tsp. baking powder
1 3/4 all-purpose flour
1 package raspberry sugar free Jello
1 tsp. vanilla extract
1 egg

Note: Preheat oven for at least a few minutes before you put in the cookies. They will bake at 400 degrees.

Mix the baking powder and flour. In a separate bowl, put in the butter and powdered gelatin and beat well to a creamy consistency. Add the vanilla extract and the egg. Gradually add the flour and baking powder mix. Be sure to blend well. Roll out the cookie dough and cut out shapes and sizes. Transfer to an ungreased baking sheet and bake for approximately 8 minutes or until the edges are golden brown.

There are numerous variations of this recipe that could include adding fruit, using a different flavor of sugar free Jello, and/or using a light topping such as a sugar free jam or glaze. The more you experiment with homemade sugar free cookies, the better you will become at developing new taste sensations and more varieties to choose from. Have fun and enjoy!

    Just found this on another site. THe butter should be 3/4 cup. I just made these with peach Jello and almond flavoring. YUM! ;-)
