Sugar Free Deserts Perfect for a Wedding Reception

Fluffy wedding cakes, 2 cups flour, 2 egg whites,1 1/2 cups splenda artificial sweetener, 1tbs vanilla extract, 1/2 cup 2% milk, mix well add more milk a little at a time if needed, batter should be a little thick.

Butter your cup cake pan with non fat butter, butter pan generously , pour cake batter into each hole, 3/4 full, bake at 350 for about 20 min., insert knife, if knife comes out clean it is done, cool cakes at room temp. after 10 min. put cakes on a plate continue to let cool.

When completely cooled top with sugar free cool whip and serve.

If you prefer an icing for your cakes, here is a recipe that you can use on so many of your sweets, 2 cups splenda artificial sweetener, splenda measures just like sugar, so 2 cups is 2 cups, 3/4 cup water, 1 tbs cornstarch, on stove top in a med. pot combine sugar, water, and cook on med. heat until melted, when all melted add the cornstarch to help thicken, you can add this icing to your cakes either warm or cooled.

Strawberries on a cloud, 3 Lbs or more fresh strawberries washed, in a large round serving platter, generously fill and spread sugar free whip cream, regular or sugar free chocolate whip cream, place strawberries neatly over top of cream sinking into the cream, be generous with the whip cream, it looks like a cloud.

Creamy fruit passion, 2 lg. cans fruit cocktail in lite syrup drained, bananas, coconut merishino cherries , cherries only for decoration so wash the juice off, 1 tub of sugar free whip cream, 1 tbs non fat sour cream.

Mix all ingredients, sour cream is to keep color and freshness of your fruit, this desert is always a winner, so make plenty, and all of these recipes can be doubled if you have a lot of people at the reception.
