Sugar Free Granola Cookie Recipe

These sugar free granola cookies are sweet and moist with a cake-like texture. They might be tiny in size, but are rich and filling! This sugar free granola cookie recipe is sweetened naturally with applesauce and dried fruits. But just in case you prefer a sweeter cookie, just add a little Splenda sweetener to keep this recipe lower in sugar and calories than typical cookies.

This method of baking is also a great way to add a serving of fruit in the diet while giving the sugar free cookies a moist texture. Remember, sugar free in this cookie recipe means without adding additional processed sugars. This sugar free granola cookie recipe is a common sense way to lower the processed white sugar that is so easy to consume in unhealthy amounts.

Ingredients for Sugar Free Granola Cookies

1 cup unsweetened applesauce

2 tablespoons vegetable oil

2 large eggs

2 tablespoons frozen apple or white grape juice concentrate

8 to 10 individual serving size packets of Splenda sweetener (optional)

2 cups all purpose flour (or 1 3/4 cup all purpose white flour & 1/4 cup whole wheat flour)

½ teaspoon baking powder

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon ground cloves

2 cups unsweetened granola

The granola used in this sugar free cookie recipe can be purchased ready made or you can easily mix a batch at home. To make your own granola, mix equal amounts of rolled oats, your favorite chopped nuts, flaked coconut, sunflower or other seeds, and chopped dried fruit. For the chopped nuts, try adding a heart healthy variety such as almonds or walnuts.

A benefit of making your own granola is adding your own favorite dried fruits. It's easy to find all types of dried berries, cherries and exotic tropical fruits in supermarkets today. The dried fruits I used in my homemade granola included equal amounts of mixed dried berries (strawberries, raspberries & blackberries), cherries, dried pineapple and raisins. Not only is homemade granola perfect for this sugar free cookie recipe, but it's great for snacks, adding to whole grain cereals or as a yogurt topping. Keep this sugar free granola on hand for adding to homemade muffins and breads as well. Just remember with dried fruits, the sugars are more concentrated than fresh fruits, so less is usually needed for recipes.

Directions for Sugar Free Granola Cookies:

Preheat oven to 350 degrees. In a large mixing bowl, beat together the applesauce, oil, eggs, fruit juice concentrate and the Splenda sweetener if using . Add the flour, baking powder and spices while mixing well after each addition. Stir in the granola until moistened.

Drop the batter by rounded teaspoons onto a greased or parchment paper lined cookie sheet. Bake the cookies for about 7 to 10 minutes. The cookies should feel firm to the touch and be lightly browned on the bottom. Cool the cookies on wire racks and store in an airtight container. This recipe will make about 3 ½ to 4 dozen sugar-free granola cookies.
