a Different Spin on Treats You Might Already Be Making at Halloween Time

Halloween, it is a celebration of fall, of scary and imaginative dangers. It is a time for kids to load up on treats and candy . Lots of times though for the diabetic person, Halloween is a difficult time. Unlike most, diabetics feel isolated or not thought about, when it comes to the assortment of goodies that people have on their party tables. Well, there is hope. Now adays you can find lots of substitutes for a person who needs little to no sugar in their diets. There is no reason a child who has sugar limitations should be left out of celebrating a holiday that encourages and promotes sugar items like Halloween.

I am a diabetic and I have struggles with good choices for me as well as my own children, especially when it comes to something a little sweet. I have a few recipes that you can make up for those in your life that need to have a limited sugar or no sugar choice when it comes to a Halloween treat, or any other occasion.

Diabetic Orange Coconut Balls-

First you will need the following ingredients,

*3 cups finely crushed vanilla wafers
*2 cups flaked coconut
*1 cup pecans, finely chopped up
*1 , 6 oz. orange juice concentrate, thawed

You will want to combine everything and shape this into a ball shape, about a bite size. Roll this in the crushed vanilla wafers and then refrigerate in an airtight container.
Next I have a recipe that I have loved as well as my children.

Diabetic Crepes-

First thing to know is that you can do alot of different things with these. You can fill them any way you want , and you can make them and refrigerate them until you use them.

*1 cup skim milk
*2 egg whites
*3/4 cup all purpose flour
*1/8 teaspoon of salt

Place ingredients ina blender, until smooth. Pour the batter in a bowl and cover. Chill this for at least one hour or you can for overnight. Spray a skillet, small in size, with non spray cooking oil. POUR JUST ABOUT 1/4 OF THE BATTER INTO THIS SKILLET, AFTER SKILLET IS NICE AND HEATED. Cook this over medium heat until you see a bubbled form and it appears that it is getting dry on top. Turn it over and cook other side. These will cook fast, and serving them warm is idealic. Put food coloring in it to color it orange for Halloween time. Add whip topping, fresh friut, roll up and heat.... Choose from anything you want.

My other suggestions are, make some sugar free puddings. buy some sugar free candies and let them make a haunted house , sorda like you make a gingerbread house, but make it spooky looking. Popcorn balls are always a big hit, coloring the popcorn orange and adding eyes and a mouth, to represent a pumpkin face. Look for sugar free caramels to make these with.

Just because you are a diabetic does not mean you have to suffer, while those around you enjoy sweet treats. Make this a funtime , Halloween is a great time to be creative. Happy Halloween, and as always be safe.
