Sugar Free Pancakes (Made with Stevia)

A Family Favorite Breakfast Without the Sugar

With everyone trying to cut back on the use of sugar, I've found that many of those old family recipes can be made healthier with some modification (using stevia instead of sugar and using a little extra butter and milk to compensate for the slight dryness stevia brings to some recipes). A few trial-and-error attempts brought me the recipe you see below. Conversion charts for modifying recipes can be found on the SweetLeaf and Stevita brand websites (although these tend to be brand specific).

Ingredients

1 ½ cups unbleached all-purpose flour
½ teaspoon salt
3 teaspoons baking powder
1 teaspoon spoonable stevia (This is for the bulk form in jars. If you are using spoonable stevia in packets, it's two packets.)
1 egg
3 ¼ tablespoons melted butter (or margarine)
1 ¼ cups milk

Directions

In a mixing bowl, sift the baking powder, salt, flour, and stevia together.

Clear space at the center of the bowl and add the egg, melted butter, and milk, and mix in the dry ingredients. (This can be done by hand, but using a mixer will guarantee a smoother batter a bit quicker.)

Lightly grease your frying pan or griddle with vegetable oil, and then warm it up over medium heat.

Pour batter onto the griddle. (How much you use for each pancake will be determined by how big you want them to be. I use just over ¼ cup for each.)

Cook the pancakes until they are brown on both sides. Serve with the syrup or fruit topping of your preference.
