Chinese Stir-fried Vegetables

Ingredients

Spinach -7-8 leaves

Fresh button mushrooms (sliced)- 5-6

Cabbage leaves-5-6

Water chestnuts (sliced) - 3-4

Cucumber (cubed and deseeded) - 2 medium

Corn flour-2 teaspoons

Oil-1 teaspoon

Red capsicum (thin sliced)-1

Green capsicum (thin sliced)-1

Yellow capsicum (optional) (thin sliced)-1

Vegetable stock-¼ cup

Crushed garlic-2 cloves

Spring onions-2

Red chilli paste-½ teaspoon

Salt- as per taste

Soya sauce-3 teaspoons

Bean sprouts-¼ cup

Cashew nuts-5-6

Method

Cut spinach and cabbage leaves. Heat oil in a cooking pan, add garlic and sauté, and add cucumber cubes, spring onion, chestnuts, mushrooms, and sauté. Add red, yellow and green capsicums, and salt as per taste. Next add Soya sauce and fry for 2-3 minutes. Then add cabbage and spinach leaves and let the mixture fry for 5 minutes.

Then add corn flour dissolved in vegetable stock, red chilli paste, and let it mix and thicken. Add bean spouts, cashew nuts and stir. Serve it hot.

Spinach and cheese balls

Ingredients

Spinach (fresh chopped) - 2 bunches

Salt -as per taste

Breadcrumbs-¼ cup

Green chillies (finely chopped) - 3-4

Cottage cheese (grated) (paneer) - 1 cup

Oil-2 tablespoon

Onion (grated) - 3

Red chilli powder (optional) - ¼ tbsp

Cardamom and cloves powder-½ tbsp

Fresh coriander leaves (chopped) - a few sprigs

Turmeric powder-¼ tsp

Ginger paste-1 tbsp

Garlic paste-1 tbsp

Tomato grated-4 medium sized

Method

1) Mix chopped spinach, bread crumbs, chopped chillies, salt, and divide into 14-15 equal sized balls from the mixture, and stuff the balls with grated cheese.

2) Heat oil in a frying pan and fry the spinach balls (cheese stuffed) till golden brown. Drain excess oil from the fried balls using absorbent paper.

3) Heat two tablespoon of oil in a pan. Add grated onions and fry till light golden in color. Then add garlic, ginger paste, grated tomatoes and cook for 10 minutes in low flame. Add turmeric powder, cardamom, cinnamon powder, salt, and stir and cook for 5 minutes

4) Add half-one cup of water and bring it to boil on low flame to make thick gravy.

Arrange cheese stuffed spinach balls in a serving dish and pour hot gravy on top and garnish it with chopped coriander.

Your delicious sugar-free Spinach and cheese balls gravy is ready to serve. Enjoy its taste you will like to have it again.

Tomato and orange soup

Ingredients

Onion -1

Carrots-2

Butter -1/2 teaspoon

Flour- 2 tblsp

Tomatoes-2-3

Orange-1

Bayleaf-1

a pinch of nutmeg

Salt

Pepper

1 celery stick finely sliced

Method

1. Slice carrots and onions finely and cook in a low fame for 5 minutes, then add floor and cook for 2-3 minutes, but don't allow it to turn brown.

2. Remove from the heat, stir in orange segments, tomatoes, nutmeg, bay leaf.

3. Bring it to the boil and simmer for 10-15 minutes. Serve it hot.

· Take Wood Apple leaves (bael leaves) (1-2), Margosa (neem) leaves-4, and Holy basil (tulsi) leaves-5 in the morning on an empty stomach for keeping sugar level in the body under control. Good for diabetic patients.

· Eat black berry fruit.

· Eat the juice of bitter gourd (1 small), tomato (1), and cucumber (half), 3-4 days a week for keeping diabetes level under control.
