Sugar-Free Cookie Recipes

Sugar free cookies are a great way to still enjoy some treats this holiday season but not have to worry about consuming so much sugar. Sugar free cookies can be enjoyed by diabetics, people trying to lose weight, or anybody who just wants to eat a little healthier.

Here are 3 great sugar free cookie recipes that you need to try.

Sugar-Free Jell-O Cookies
1 ¾ cup all purpose flower
¾ cup butter
½ teaspoon baking powder
1 package sugar free gelatin (Jell-O or generic brand) - flavor of your choice
1 egg
1 teaspoon vanilla

Mix the flour with the baking powder in a bowl. Use a mixer to cream the butter and gelatin together. Beat well. Then beat in the vanilla and the egg. Gradually add the dry ingredient mixture and blend well. The dough can be rolled out and cut into shapes or shaped by hand. Place on an ungreased cookie sheet in a 400 degree preheated oven. Bake for approximately 8-9 minutes.
*Makes approximately 5 dozen cookies

Sugar Free Raisin Spice Cookies
1 ¾ cup sifted all purpose flour
1 teaspoon cinnamon
½ teaspoon salt
½ teaspoon nutmeg
1 tsp baking soda
1 cup sugar free applesauce
2 teaspoons sugar substitute
1 egg
½ cup raisins
½ cup softened butter
1 cup all bran

Mix the flour, baking soda, salt and the spices in a bowl. Use a mixer to mix the butter, egg, and sugar substitute. Be sure that it is mixed well and then add in the applesauce and then dry ingredients. Be sure that you mix well as you add the ingredients. Use spatula to fold in the raisins and the bran. Drop the dough by teaspoon full onto a greased cookie sheet. Bake in a 375 degree preheated oven for approximately 20 minutes.
*Makes approximately 3 dozen sugar free cookies.

Sugar Free Pumpkin Cookies
2 eggs
½ cup corn oil
2 cups flour
1 cup sugar substitute
1 teaspoon salt
1 teaspoon nutmeg
1 cup pumpkin
2 ½ teaspoons cinnamon
½ teaspoon ginger
1 teaspoon baking soda
1 cup nuts of your choice (walnuts or pecans)

Mix the dry ingredients in a bowl (salt, spices, and flour). Beat the oil and eggs with a mixer until they are well blended. Add the sugar substitute and beat the mixture until fluffy. Add the pumpkin and the dry ingredients slowly. Add in the nuts and mix until evenly distributed. Drop teaspoons of the cookie dough on a greased cookie sheet. Bake at 375 in a preheated oven for 15-18 minutes.
*Makes approximately 3-4 dozen sugar free cookies.

For sugar free cookie recipes that call for a sugar substitute be sure that you use one that is designed for baking such as Splenda or a natural substitute like naturally maple syrup.
