It's Valentine's Day and your stash of chocolates and cookies has come to you. You've just lost another 5 pounds are finally able to fit into that little red dress you've been saving for a special occasion. Hunger hits and your craving for cookies is strong. Rather than grab a sugar cookie or five, try these!

Guiltless Sugar Cookies
1 1/4 cup almond flour
1 cup Splenda
1/4 cup butter at room temperature
1 large egg
1 tsp vanilla
1 tsp xanthan gum (optional)

Preheat oven to 350. Line baking sheets with parchment paper or a non
stick baking mat. Stir together flour and Splenda. Blend in butter,
egg, vanilla, and gum until well mixed. Form into 1 inch balls on a
cookie sheet and flatten each with a fork or bottom of a glass.
Sprinkle with Splenda if desired. Bake for 8 minutes or until set but
not brown. Allow to cool for 2 minutes on baking sheet then remove to
wire racks to cool.

This recipe was given to me by a friend. I absolutely love these cookies! They're guilt-free munching! Some notes about the recipe, however. First, I'm sure you're thinking, "Almond flour?! Crymson, where am I going to find Almond Flour!?" Don't fret! Almond flour is nothing more than finely chopped almonds. You can find in the organic sections of grocery stores or Whole Foods. Barring that, buy a bunch of almonds and a food processor (or, borrow the food processor from a neighbor. Pay them with the other cookies that have a lot of calories)! Xanthan gum is a gravy thickener. It's optional, but it works really well for gluten-allergic people and helps the dough not crumble so much. If you use the xanthan gum, the baking time will need to be a bit longer than 8 minutes. Perhaps 10. I'm not sure, so you'll have to experiment a bit.

This recipe should make about a dozen and a half to two dozen cookies. The "healthy" information for these cookies is as follows: 1280 calories, 33.3g/18.3g carb/fiber, 118.5g fat. That's the BATCH, not the individual cookie. That's roughly 53 calories per cookie!

Substituting Splenda for sugar is easy! It's technically a 1-1 ratio when baking! This does make for a sweeter flavour, but it's calorie-free!
