Summer Catfish Recipes

Try these four great recipes for those tasty catfish you catch over the summer. Included are Simple and Delicious Fried Catfish, Southern Baked Catfish, Cape Fear Catfish Cakes, and Lemon & Pepper Catfish.

Simple and Delicious Fried Catfish

The Italian salad dressing in this one does wonders as a marinade-- if you haven't ever tried it with fish you should!

6-8 medium catfish fillets
milk
Italian salad dressing
flour
vegetable oil

Marinate catfish fillets in Italian dressing for one day. Dip fillets in milk, roll in flour, and cook in vegetable oil over medium heat in a large skillet or frying pan. Do not overcook, fish is done when it is golden and flakes with a fork. Serves 4. Great with French fries, sliced tomatoes, and sweet tea.

Southern Baked Catfish

4 to 5 lb catfish, skinned and dressed
4 tablespoons mayonnaise
2 lemons, sliced
1 med onion, chopped
chopped or minced parsley
paprika
salt and pepper
olive oil

Preheat oven to 450 degrees. Sprinkle catfish with salt and pepper and coat with mayonnaise. Place catfish in a large pan greased with olive oil. Arrange lemon slices on top and sprinkle with onion, parsley and paprika. Reduce oven to 400 degrees and bake catfish 10 minutes per pound. Serves 4.

Cape Fear Catfish Cakes

1 lb catfish fillets, cooked and diced
2 stalks of celery, diced
½ red pepper, diced
1 small onion, diced
1 small red potatoes, cooked and diced
1 egg, beaten
1 cup bread crumbs
½ teaspoon seafood seasoning
dash soy sauce
dash Worcestershire sauce
dash hot sauce
olive oil

Mix all ingredients except oil, and blend well. Form into cakes. Heat olive oil on the stove and sauté cakes lightly on both sides. Don't overcook, serve as soon as cakes are golden brown. Serves 4.

Lemon & Pepper Catfish

2 channel catfish fillets
1 cup sliced mushrooms
½ cup each chopped onion and red pepper
1 tablespoon lemon juice
½ tablespoon black pepper
olive oil

Heat olive oil in skillet on medium heat and sauté mushrooms, onions, and peppers for 8 minutes. Rub lemon juice on fillets and dash with pepper. Move veggies to the side of the skillet and cook catfish in center 13 to 15 minutes until done. Serves 2. Great with wild rice.
