Apricot Pudding
Ingredients:
Wide pot
Apricot leather
2 Cups of boiling water
Raisins(optional)
Vanilla
Sugar
Corn Starch
Almond halves(optional)
Shredded Coconut(optional)
This dessert is from Egypt and is somewhat harder than the rest of the recipes.
First you'll need to cut a square of apricot leather, being about 5" by 8" and about 1/4" thick(if it's very thin add more). Boil 2 cups of water, and then turn off the heat and put the apricot sheet into the water and leave it for two hours so the apricot dissolves into the water. Come back, and if it's not like juice yet then put everything from your pot into a food processor and puree it. Afterwards, put it back in the pot and add some raisins if you like.
Now, in a separate bowl, put 3/4 of a cup of corn starch. Then add 3/4 of a cup of water into the bowl and mix until it becomes like glue. Then slowly add this mix into the apricot pot, mixing continuously until it's all the same color(you need to mix a lot). Now add in 1/2 cup of sugar(more or less according to your preferences), and a dash of vanilla and mix until it's all homogenous. Add the almonds and coconut on top if you like, and then put it in the fridge for a few hours.
Celery Sticks
Ingredients:
celery
peanut butter
raisins or M&Ms
This is the easiest summer dessert you can make. First, you'll need some fresh and cold celery, preferably the large kind with a bigger groove in the middle. Then, using a spoon, place some of your favorite peanut butter(or almond butter if you'd like to experiment) in the canal of the celery. Then take raisins or some M&M's and place them on the peanut butter and you have a quick dessert.
Fruity Jello
This is very easy, but can be a great and very low-fat dessert.
Ingredients:
1 Jello Box
2 cups water
Fruits of your choice
First boil 2 cups of water, and then off and slowly mix in the package of Jello. Add fruits of your choice, bananas and grapes being great choices. Chill in the fridge and enjoy.
Serves 2-4 people.
Homemade Lemon Icicle Pops
Ingredients
Lemons
Water
Lemon Squeezer
Sugar
Popsicle molds
This is a fun recipe for the kids. First, cut the lemon in half and squeeze into the bowl. Add 2-3 tablespoons of the lemon juice to a cup of water, and then add about 2 tablespoons of sugar. Mix thoroughly, then put into the mold. Consider putting in chopped pieces of fruit also, like pineapple or strawberry.
