Summer Diet Recipes: Green Beans and Tzatziki

I am size 4 and staying thin is not easy for me. I try to cook at home as much as possible. I try to eat fish, vegetables and grain. I have to watch my diet at all times. I like vegetables but I do not like them boiled. I could never eat boiled green beans, carrots or asparagus. I like my vegetables either stir-fried, oven roasted or cooked in the below style.

If you have children they might enjoy this dish too. I think it is the only way my niece and nephew eat green beans. I will write this recipe using fresh green beans but you can use the same recipe to cook almost all the vegetables. You can cook eggplants, cauliflowers, zucchini (add a little rice to the zucchini version), and spinach in this style. When you are coking different vegetables, you might not need to cook them as much as you cook green bean. Green beans take their time.

Healthy and Delicious Green Beans Recipe (enough for 5)
1 lb fresh green beans
2 carrots (if you prefer baby carrots, adjust the quantity)
2 table spoons of olive oil
2 onions (preferably red onions as they are better for you)
3, 4 tomatoes (medium size)
Salt
A pan big enough to take all of them.

1) Cut the onions into little pieces. Put the olive oil and the onions into the pan. Cook them until the onions are softened, transparent.
2)After cleaning the green beans, cut them into smaller pieces. If you have long beans cut them into four, if your beans are regular size, cut them into three.
3)Add the green beans to the cooked onions. Cook them together for ten minutes, mixing them often.
4)Cut the tomatoes into little pieces and add it to the onions and green beans.
5)Add one glass of hot water to the mix. Add salt. Cover the pan with the lid. Lower the heat and cook them for 45 minutes.

You can serve it cold or warm. I prefer it cold. I recommend brown rice with it.
If you are going to cook it in the summer, try serving it cold. You can also serve Tzatziki with this dish. Brown rice, Tzatziki and Green Beans would be an ideal vegetarian dish for your guests. If you don't serve the Tzatziki, it would be suitable for vegan diets too.

Here is a quick Tzatziki recipe
Mix two cups of non-fat plain yogurt, 1/2 cup of grated or finely diced cucumber. Clean six garlic cloves and put them in a garlic press. Add the garlic puree into your yogurt and cucumber mix. Mix them all together, add a spoon of olive oil(optional).
If you do not have a garlic press, you can use finely chopped garlic instead.

Enjoy your green beans and Tzatziki.
