Super Fast Super Tasty Shrimp Salad
Ingredients:
16 ounces frozen cooked small sized shrimp
1 stalk celery, chopped
2 tablespoons onion, chopped
1/4 cup bell pepper chopped
3/4 cup mayonnaise
1/8 teaspoon garlic powder
salt and ground black pepper to taste
Directions:
In a colander, rinse the frozen cooked shrimp under warm tap water until thawed. Transfer to salad bowl and stir in remaining ingredients until well-coated. Serve with your favorite crackers.

Hurry Curry Chicken Salad
Most grocery stores sell cooked rotisserie chickens that are just perfect for when you don't have time. Keeping one in the refrigerator works great in this cold curried chicken salad. But you can also substitute chicken breast from the can, in a pinch. This tasty salad will give you gourmet flavor and you can substitute plump raisins or craisins (which are sweetened dried cranberries made by Ocean spray and sold where raisins are sold), or you can use green or red seedless grapes. The fruit adds sweetness and texture to the salad and enhances the nutty curried chicken salad flavor. I often use apple because there's usually an apple or two around that can be used for a quick recipe. But if you get a chance to buy craisins, they are superb in this recipe!
Ingredients:
3 cups boneless cooked chicken. (If you use chicken breast from the can, be sure to drain it first)
3 tablespoons onion, chopped
1 stalk celery, chopped
1/4 cup crushed pecans
2 teaspoons curry powder
1 cup mayonnaise
black pepper to taste
Directions:
Chop or dice the chicken to the bite size pieces you enjoy in a chicken salad. Stir in mayonnaise and then remaining ingredients. Serve immediately with crackers or on your favorite bread for sandwiches, or just serve over a bed of spinach leaves or organic greens. If you are looking to reduce calories, you can substitute low cal or fat free mayonnaise in place of real mayonnaise. This curry chicken salad infuses greater flavor the longer you refrigerate it to add chill time.

Quick And Easy Greek Salad
This no cook recipe is not only fast, it is the perfect change of pace meal for salad lovers. My favorite salad dressing to use is the Good Seasons Bottled Italian Dressing made with olive oil because the seasoning is just perfect. My second choice for a salad dressing is Newman's Own Olive Oil & Vinegar Dressing (you can read a product comparison here) :

However you can use whatever your favorite bottled Italian dressing is, but I recommend one that is olive oil based.
Ingredients:
1 head of iceberg lettuce, washed and chopped
6 ounces crumbled feta cheese
1 cup red onion, sliced into thin rings
1 cup black olives, pitted
2 ripe Roma tomatoes, sliced
1 cucumber, peeled and sliced
small jar of artichoke hearts, drained and chopped
herbed croutons for garnish
Italian Vinaigrette Salad Dressing
Directions
In large salad bowl toss all ingredients and drizzle with Italian dressing and toss again until well coated. Serve with your favorite artisan bread.
