Summer Squash and Garlic Side Dish with Cheddar

Finding an easy dish to prepare as a vegetable side dish doesn't have to be hard, or expensive. This recipe uses summer squash that is sauteed with fresh minced garlic cloves, onions and has shredded cheddar cheese stirred inside right before serving. Use yellow bar squash, green zucchini or other favorite summer squash. This recipe serves about 6 to 8 depending on serving size.

Summer Squash with Garlic and Shredded Cheddar

Ingredients:

6 medium baby summer squash, washed and sliced (or cubed, as desired)
1 medium yellow onion, chopped
3 cloves garlic, minced or pressed through a garlic press
1 Tbsp olive oil
1/2 cup shredded sharp cheddar cheese
1/2 cup chopped tomatoes
1 Tbsp chopped fresh parsley
Salt, to taste
Black pepper, to taste

Procedure:

In a large non-stick frying pan, heat the olive oil. Add in the sliced summer squash and chopped onion, and saute for about 5 to 7 minutes or until lightly browned, stirring occasionally. Add in the minced gresh garlic and continue to cook until fragrant, about 1 to 2 minutes.

Stir in the cheddar cheese, fresh tomatoes and parsley until heated through. Season with salt and pepper to taste.

Transfer to a serving platter and serve warm.
