Summer Surf Fish Recipes

Here are some quick and tasty recipes for those summer surf fish like bluefish, redfish, and pompano. You can catch them on the beach and then cook them up on the deck or in the kitchen. Fresh fish from the surf are the among the tastiest of seafood.

Sassy Bluefish

2 lbs bluefish fillets
¾ cups beer
1 ½ teaspoons garlic powder
½ teaspoons Cayenne powder
1 ½ teaspoons rosemary
Fresh parsley
Olive oil

Blend the beer, garlic powder, Cayenne pepper, and rosemary together. Marinate the bluefish in the sauce in the refrigerator for 45 minutes, turning the fish a few time.

Place the marinated bluefish in a lightly oiled pan and broil for approximately 8 to 10 minutes or until fish flakes easily. Baste occasionally during cooking. Garnish with fresh parsley.

Quick and Easy Sautéed Redfish

4 medium redfish fillets
2 tablespoons olive oil
flour
salt
pepper
paprika
lemon wedges

Roll fillets in flour and sprinkle with spices to taste. Heat olive oil in a stove top pan and cook fillets uncovered over medium high heat for five minutes. Flip fish and reduce heat to medium, sauté five minutes more or until fish is done. Serve with lemon wedges, great with wild rice. Serves 2.

Grilled Pompano

4 pompano (1 lb each), dressed
2 tablespoons soy sauce
2 tablespoons orange juice
2 tablespoons lemon juice
2 tablespoons tomato juice
½ tablespoon garlic salt
fresh black pepper to taste

Mix all ingredients except fish. Marinate pompano in other ingredients for no more than 20 minutes. Grill on medium high heat on grill about 6 minutes on each side. You can melt some butter and pour over the fish at the end if you want, though be aware of the calorie and fat increase if you do. Serves 2.

Grilled Snapper Bluefish

Snapper bluefish are small bluefish, and the tastiest are those that weigh a pound or less each. Check size limits in the state you are fishing in before you keep a snapper bluefish.

8 snapper bluefish, dressed
olive oil
salt
pepper
lemon juice

Rub bluefish all over with oil and sprinkle with lemon juice. Sprinkle with salt and pepper. Grill over medium high heat about 6 minutes for each side. Great with wild rice. Serves 4.

    Jeffrey, Question: What does pompano taste like? I'm not familiar with that one. cheers :)
