Wallah! You've spent less than 10 minutes and your dip is a hit!
For a great salad that you make 24 hours ahead of time you've got to try my Mother's 24 Hour Salad. She learned this in her senior high cooking class and I'm all about simple and tasty. Which this one certainly is...
24 Hour Salad:
1 medium size can pineapple chunks drained
2 small cans mandarin oranges drained
1 ¼ cup miniature marshmallows
1 cup shredded coconut (if desired)
1 cup sour cream
Mix fruit and all other ingredients. Pour over sour cream and let set 24 hours in the refrigerator. SUPER SIMPLE!
For a yummy Hot Mom Dish of the day let's focus on my Mother's best Dip and Chip Fryer coating for the hottest fried or baked chicken, or fish and chips of the summer...
Dip N Chip Fryer Coating:
2 ½ to 3 lb. Fryer cut up
1 cup sour cream
1 cup potato chips crushed (preferably Lays)
Garlic Salt
Salt and Pepper to taste
Beat sour cream until smooth and thin. Dip fryer pieces until coated all over. Roll pieces in crushed chips, season with salt, pepper, and garlic salt. Arrange the pieces in a shallow baking pan. Bake in preheated oven at 350 degrees for one hour. Turn once.
Baking is always better than frying for your health but you can put these in a deep fat fryer as well if you can't resist.
To top it off with a festive dessert, a Jello Poke Cake is the bomb for your guests.
Jello Poke Cake:
Bake on 9x13 white cake.
Poke holes in the cake with a knife and set aside.
Dissolve one large package red jello in 2 cups of boiling water (you can use any flavor).
Pour over the cake (it will seem like it's too much liquid but it's not)
Put in refrigerator until completely cool.
Frost with Cool Whip.
With these great recipes you can be the hottest mom of the summer and your kids will be loving every bite of their delicious veggies, eating fruit with your 24 hour salad, eating delicious baked chicken (the healthier choice) and don't forget a delicious cake frosted in low far Cool Whip instead of sugary frosting! Not only are you a Hot Mom, you're a smart one too.
