Sunomono -- Japanese Cucumber Salad

Pickled Cucumbers Make a Refreshing Summer Salad

I love sunomono and I get a lot of cucumbers in the summer from the farmer's market, so it makes sense to make Japanese cucumber salad. Sunomono is usually made with Japanese (English-style) cucumbers, but if you have plain cucumbers or pickling cucumbers those will work. I use apple cider vinegar for a different flavor, but its more traditional to use rice vinegar. The recipe may be doubled or tripled as required.

1 large cucumber or 3 pickling cucumbers
1/8 cup lemon juice
1/8 cup apple cider vinegar or rice vinegar
1 Tbsp grated daikon
1 tsp fresh ginger root
1/4 tsp salt
Dash black pepper

Slice cucumbers and mix with all ingredients. Chill in the refrigerator for 6 or more hours.
