This dip is really easy to put together and yet goes over big with most any type of crowd you're trying to feed, even kids really love this dip.
The needed ingredients are:
This recipe will fill your typical sheet cake pan.
At least a couple of cans of "Refried Beans" this can vary on the amount of people you are feeding.
1 large tub of "Sour Cream" or two small tubs
1 large size jar of chunky "Salsa or Picante" sauce
2 or 3 cans of chopped "Green Chilies"
2 or 3 cans of chopped "Black Olives"
2 large packages of shredded "Cheddar cheese"
and some "Avocado" chopped fine or avocado spread, you can even use "Guacamole"
1 super large bag of "Scoop Frito's"
This is the way I layer my dip but you can layer it however you wish.
The bottom layer is refried beans, the layer should be fairly thick I usually make it at least a half an inch if not a little more. After all this is your base layer and will stretch the other ingredients especially when feeding a large crowd.
Next layers will be the green chilies and black olives, make sure the whole layer of refried is equally sprinkled with green chilies and black olives.
Next layer will be the salsa I usually lay this on fairly thick too. You want to make sure that it is going to make a statement, but don't make it so thick that it will be messy. Sometimes I leave off some of the juice and try to strain it a little to get the chunky pieces of picante or salsa layered on good, not to mention too much of the liquid will water it too much.
Next layer will be the tidbits of avocado or guacamole, depending on what you use dollops for spread or guacamole and sprinkles if your using thin pieces or slices of buttery soft avocado.
Next layer is a light layer of cheese followed by the sour cream followed by another layer of sprinkled cheese.
This is the most delectable dip ever and goes over really big. If I know I have a big crowd and it will get eaten fast, I sometimes top it off with bits of tomato like finely chopped tomatoes but only if I know they can eat it fast. If I think that I will have leftovers I will leave this off since it keeps better without tomatoes on top.
Typically if you make this dish and cover it with "Saran Wrap" it will keep for at least 2 days but definitely keep a watch on it and when it starts to break down its time to throw it out.
Don't make this dip too early either, I usually make it about an hour before company.
Refrigerate this dip at all times unless of course everyone is eating it.
