This chili is really not that hard to put together and yet goes over great with any group of people you want to serve it to, not to mention kids really enjoy this chili too.
The necessary ingredients are:
This recipe will fill your typical Dutch oven cooking pan.
You will need several cans of "Cannellini Beans", this depends on how many your feeding but I will normally go through 3 or 4.
"Shredded or diced chicken", this can be modified in many ways but I really enjoy getting the rotisserie chicken from the deli and shredding it for a quick dinner fix, but you can also roast your own chicken or just stew some chicken like you would for chicken salad and cut it into pieces. I usually use a lot of chicken but you can decide how much you want to use.
2 packages of "White Chili Dry Seasoning Mix", you can normally find this in the gravy and mixes aisle at your local supermarket next to the regular chili dry seasoning mixes.
1 jar of "Green Salsa", this is completely optional but I tend to add a couple of tablespoons into the chili mixture, this makes for added texture and spice.
2 packages of "Shredded Cheddar Cheese", this will get sprinkled on top of each bowl
"Sour Cream", this of course is optional but I like a dollop in every bowl.
When you mix it up in the pan you want it to be equally mixed with beans and chicken but I typically have it thick with chicken.
The seasoning should be mixed in the beans prior to adding the chicken. Go easy on the seasoning and taste it often to make sure it is not too hot for your family or friends tastes.
Typically I tell people to add one package stir and taste then make their own choices on whether they need the other package or just add more of the green salsa if you don't want to add the other package of white chili seasoning. You will need to add water to make the chili the consistency that it needs to be, but I normally add a little milk or chicken stock in to make it a more flavorful. I typically just use half water and half chicken stock or ¾ water to ¼ milk.
If you haven't added the salsa that is fine but I normally add both packages and 2 tbls. of green salsa for a full Dutch oven pan.
After the mixture has stewed on the stove until piping hot it will be time to serve up.
I typically fill the bowls and top off with a generous helping of cheddar cheese and dollop of sour cream, serve with plenty of "Saltine" crackers and trust me you're a hit.
