Super Bowl Party Recipe: Crockpot Chili

You'll score a touchdown at your next Super Bowl party with this tasty chili recipe. It has been a favorite of mine since I was a child. It is easy to prepare and perfect for game day.

This is more of a mild, "tomatoey" chili, but the spices can easily be increased to make a spicier version for those who like a bit more kick to their chili.

Crockpot Chili

1 1/2 to 2 pounds ground beef
1 chopped onion
1 chopped green pepper
Three 14.5 ounce cans diced tomatoes (do not drain)
One 15.5 ounce can black beans, drained
One 15.5 ounce can kidney beans, drained
Two 8 ounce cans tomato sauce or tomato juice
1 teaspoon minced garlic
1 to 2 tablespoons chili powder
¼ teaspoon pepper
1 teaspoon salt
¼ teaspoon crushed red pepper
1 teaspoon cumin
Diced green onion (optional)
Sour cream (optional)
Shredded cheddar cheese (optional)

Brown the ground beef and onions with a little salt and pepper to taste. Drain off fat. Place meat in Crockpot. Add green pepper, beans, tomatoes, tomato sauce, and spices. Mix well. Cover and simmer on low 4 to 8 hours. It makes about 8-10 servings. If desired, serve with a dollop of sour cream, a sprinkle of cheddar cheese, and a spoonful of diced green onions on top. I always serve this chili with a side of cornbread as well. If you have leftovers, this recipe does freeze nicely. Enjoy!
