Super Bowl Party Recipe: Spicy Baked Fries with Bacon and Bleu Cheese Dip

Amanda Brandenberg
I love Super Bowl parties. I will admit; I don't understand every aspect of the game, but I know enough to cheer the team I'm rooting for that year. But for me, Super Bowl parties are not necessarily about football. What I really love is all of the food that comes with a Super Bowl party. Yes, it tends to be greasy and fattening, but that is what makes them all the more delicious. If you are like me and love great snack food for your party, try this delicious recipe. My husband and I especially love the creamy, tangy dip. It is the perfect accompaniment for the zesty fries. The bacon adds a smoky taste reminiscent of the best tavern foods. Everyone on your guest list will be sure to chow down on these spicy baked fries with bacon and bleu cheese dip. You may need to make extras.

Fries:

6 russet potatoes

¼ cup butter, melted

2 tablespoons chili powder

1 teaspoon salt

½ teaspoon black pepper

Dip:

2 8-ounce packages cream cheese, at room temperature

4 ounces crumbled bleu cheese, at room temperature

2 slices bacon

1 tablespoon Worcestershire sauce

¼ teaspoon garlic powder

1 tablespoon parsley flakes

Light cream

To Make:

1. Preheat the oven to 450 degrees. Cut potatoes (do not peel) into ¼ - ½ inch slices. Smaller slices will cook faster. Put potatoes into a large bowl and pour the melted butter over the potatoes. Sprinkle evenly with chili powder, salt, and black pepper. Toss.

2. Arrange potato slices in a single layer on a baking sheet. Bake for 30-40 minutes. Turn fries at least once, halfway through, to ensure they brown on both sides.

3. Meanwhile, cook bacon on the stove at medium heat until crispy. Drain.

4. Cream the cheeses together with a hand mixer. Mix in Worcestershire sauce, garlic powder, and parsley flakes. Add light cream slowly, until dip reaches desired consistency. Crumble the bacon into the dip and stir.

5. When fries and dip are ready, serve together for maximum enjoyment at your Super Bowl party!
