Sloppy Joes:
1 pound ground beef (I use chuck roast)
2 medium white onions chopped
3 tablespoons of flour
1 cup of water
1 small bottle of Heinz ketchup
1 tablespoon of vinegar
1 tablespoon chili powder
¼ cup of brown sugar
1 can of corned beef
Fry beef and onion together and drain grease.
Add 3 level tablespoons of flour, 1 cup of water, 1 small bottle of Heinz ketchup (1 ½ cups if pouring from large bottle), 1 tablespoon of vinegar, 1 tablespoon of chili powder, ¼ cup of brown sugar and 1 can of corned beef (corned beef hash that's in the Spam style can) in a large non-stick skillet to finish. Cover with a lid and simmer for 35-45 minutes on low. Watch the mixture so it doesn't burn. Stir occasionally, making sure to stir middle of mixture.
You may add more brown sugar for sweetness.
Serve on hamburger buns. Can be kept warm in a crock pot on low. Also freezes well in the event some is left over - but don't count on it.
Sweet and Sour Cocktail Sausages:
1 package Hillshire Farms smoked cocktail sausages
1 large bottle hot sauce (I use the cheap Wal-Mart brand of Louisiana-style hot sauce)
1 large jar of concord grape jelly (Again, I use the cheap Wal-Mart kind).
Dump the sausages, whole bottle of hot sauce and whole jar of jelly into a crock pot. Turn pot to high. Stir ingredients until jelly is melted and sausages are well coated. Turn to medium and cook until concoction is steamy. This can stay on low for several hours, as the sausages will maintain their shape and won't break down. The longer it's cooked, the better the sauce will penetrate the sausages.
Chili Con Queso
3 large jars of Cheez Whiz or similar processed cheese product
1 pound ground beef
Chili powder
Cumin
Garlic powder
Cayenne
1 medium white onion
1 or 2 diced jalapenos
Brown the beef with the onion. While it's browning, lightly dust with chili powder, garlic powder and cumin. Add ½ tablespoon of cayenne pepper. Once cooked, drain and place in a large crock pot.
Dump the 3 jars of Cheez Whiz into the crock pot and mix with the beef and jalapenos. Place on medium and heat through thoroughly until mixture gets a nice creamy consistency. Place on nacho chips or even on a hotdog.
