Super Cheesy Meatloaf Roll Recipe

Meatloaf lovers will find this super cheesy meatloaf roll recipe a culinary treat! This meatloaf recipe adds a spicy cajun flavor that can't be beat! Your taste buds will thank you for trying it!

Ingredients:

1 lb. Lean ground beef

1 egg

2 cups bread crumbs

½ cup finely chopped white onion

½ cup finely chopped bell pepper

½ cup ketchup

½ tsp black pepper

1 tsp. Tony Chachere's Original Creole Seasoning

½ tsp. Chili powder

½ tsp. Garlic powder

¼ tsp. Louisiana Hot Sauce

3 slices American cheese

3 slices Swiss cheese

½ cup barbeque sauce

½ cup water

Combine the lean ground beef, egg, bread crumbs, white onion, bell pepper, ketchup and seasonings, work in well and form into a loaf. You can adjust the seasonings (more or less) to taste, depending upon how spicy you like your food! However, if you leave out the Tony Chachere's Original Creole Seasoning, you are not going to get the same flavor. This lends a delightful cajun flavor to the recipe! You may also add more bread crumbs if the meatloaf is not holding together well. If you like more of a vegetable flavor, you can add more white onion and bell pepper or other vegetables.

Separate the loaf into two sections and spread out flat. Place the cheese slices on top of one section of the meat. Top with the remaining meat mixture. Roll the loaf up with the cheese well covered by the meat. Place in oven dish and bake at 375 degrees uncovered for one hour.

Combine the barbeque sauce and the water and pour over the top of the meatloaf. Place in oven until topping is slightly browned. Remove from oven and enjoy! You can spoon the drippings on top of the meatloaf for added flavor.

Meatloaf will keep in your refrigerator for about a week well. It is great leftover, or even as a sandwich! You can also freeze it. If you are looking to prepare meals in advance, you can always make the mixture up and freeze it, take it out, thaw and cook.

Another variety of this dish adds potatoes around the meatloaf. The potatoes have a wonderful flavor baked in the spicy juice of the meatloaf!
