Super Easy Beef and Broccoli and Cheeseburger Rice Recipes

You have had a long day and you are dog-tired, but the family is counting on you to get dinner on the table and quickly I might add. These easy recipes for Asian beef and broccoli (sounds so fancy) and super fast to prepare and cook cheeseburger rice, will save the day and your nerves as well.

Asian Beef & Broccoli

What You Will Need - 4 servings

¾ pound cooked steak (leftover) or deli roast beef - cut into thin strips
3 tablespoons soy sauce (low sodium is best)
1 package Rice-A-Roni® (Beef Flavor)
2 tablespoons margarine, butter or substitute
½ cup onion - chopped
2 cups broccoli florets
½-teaspoon ground ginger

Directions

Mix soy sauce into meat and set aside.

In a 3-quart glass casserole (microwave safe), combine Rice-A-Roni® with butter and onions. Microwave on high, uncovered for about 4 to 5 minutes or until vermicelli is golden brown. Stir after two minutes of microwaving.

Stir 2 3/4 cups of water and seasoning packet into the vermicelli mix and cover. Continue microwaving on high for 10 minutes. Stir in the meat mixture, broccoli and ginger. Cover and microwave another 8 to 10 minutes. Liquid should be absorbed and vermicelli tender. Let stand for 3 minutes before serving.

Monterey Jack Cheeseburger Rice

What You Will Need - 4 servings

1-pound ground beef or ground turkey
1 ¾ cups water
2/3 cups catchup
1-tablespoon Dijon mustard (can use yellow)
2 cups Minute® White Rice (uncooked)
1 cup shredded Monterey Jack cheese

Directions

In a large skillet, brown meat; drain. To the meat, add water, mustard and catchup and bring to a boil. Stir in white rice. Sprinkle the cheese on top of the mixture, cover and cook on lowest heat for approximately 5 minutes.
