Super Easy Holiday Salad, Fruit and Veggie Dressing Recipes

Along with the variety of holiday food or appetizers you will be serving your guests, include a classic salad and fruit for those who prefer eating on the lighter side. Make an ordinary green salad, sliced fruit or raw veggies stand out with one of these four super easy to make, but delightful dressing recipes.

Soy-Ginger Dressing with V8® Juice

Ingredients

¾ cup V8 ® Vegetable Juice

1/3 cup canola oil

2 tablespoons soy sauce

2 tablespoons red wine vinegar

1-tablespoon sugar (can use sugar substitute)

1 tablespoon grated ginger (fresh)

1-tablespoon dry sherry

Using a jar with a cover, combine all ingredients and shake well until blended. Refrigerate at least 2 hours. Can be served over green or pasta salad. Makes 1 ½ cups. Adjust accordingly for the amount of guests you will be serving.

Kicked-Up Parmesan Dressing - Perfect Veggie Dip, too

Ingredients

1 envelope onion soup mix

1 ½ cups mayonnaise (can be reduced or fat-free)

½ cup grated Parmesan cheese

1/3 cup milk

1-tablespoon anchovy paste

½-teaspoon curry powder

1 garlic glove, minced

Combine all ingredients in a medium bowl. Stir until thoroughly blended and cover. Chill for at least 2 hours. When ready to serve, thin with a little milk if needed. Makes 2 cups, but you can adjust accordingly.

Quick Apple-Honey Dressing - Great on Sliced Fruit

Ingredients

½-cup vegetable oil

1/3 cup honey

3 tablespoons apple juice

Combine all ingredients and blend on medium until smooth. Can be served immediately. Makes 1 cup.

Low Calorie Italian-Lemon Dressing

Ingredients

¼-cup lemon juice from concentrate

2/3 cups water

1 package low calorie Italian dressing mix

Add all ingredients to a cruet (or jar with lid) and shake well until blended. Chill to enhance flavor. Makes approximately 1 cup with 8 calories per tablespoon.

These simple-to-make dressings will impress your holiday guests. Make them ahead of time and save time in the kitchen.
