2. 1/3 cup white sugar
3. 1-1/2 teaspoons baking powder

Directions for the cake:
- Preheat oven to 325 degrees F. Grease an 8 inch to 10 inch baking pan.
- Measure flour, sugar, baking powder, and salt into sifter. Sift into bowl. To this mixture add oil, egg yolks, water and vanilla. Set aside to rest. Don't beat the mixture yet.
- In a large mixing bowl, beat egg whites until they stiffen. Have patience they will turn white and stiffen. Set aside.
- Beat the oil, egg yolks, water and vanilla batter until smooth and light. Pour gradually over egg whites, folding in with rubber spatula. Do not stir we want to preserve the air bubbles. Pour batter into baking pan.
- Bake for 40 minutes. In the mean time, get the ingredients for the frosting together.
Let the cake cool for at least 30 mins or until it comes to room temperature.
Ingredients for Mocha Whipped Cream Frosting
1. 2 cups Heavy Cream
2. 3 tbsp. Cocoa powder
3. 1 tsp. Instant Coffee granules
4. 1/2 cup sugar
Directions for Mocha Whipped Cream Frosting
In a bowl stir, don't whip, the cream, sugar, cocoa, and instant coffee until mixed. Refrigerate for about an hour, then whip until mixture holds a shape.
Cut the cooled cake into two layers. Spread a layer of frosting on the top of the bottom layer of the cake and then stack the top layer of the cake on it. Spread frosting on the top of cake. Then frost the sides of the cake.
You can decorate the cake as you wish but the usually would be with a little dusting of cocoa powder done with the help of a small sieve. You can also sprinkle a few chocolate sprinkles or if you have a block of chocolate at hand, decorate the cake with chocolate swirls.
I hope you and your family enjoy this recipe, as much as mine has. Bon appétit!
