Enjoy One of These with Your Family This Summer

We all know how busy we are during the summer. We have kids and activities that can keep us on the run and very busy. You have enough to worry about trying to fit everything in, the last thing you need to worry about is what to serve with dinner. Here are a few things to make at dinner time to accompany your favorite main dish. Enjoy!

Grilled Peppers

Green, Red, and Yellow bell peppers cut in half
1 Stick of butter
1 tsp. of your favorite all purpose season salt
Little shake of salt and pepper

In a saucepan melt butter and add season salt and salt and pepper. Put your pepper halves cut side down directly on the grill. Baste peppers in butter mixture. Close the grill and come back in about five minutes. Baste again and flip them over. Now baste the inside with the butter and let them cook another five minutes. Remove from the grill and serve. It's just that simple.

Potato Pouches

2 large potatoes quartered and sliced
1 15 oz can of corn
1/2 onion chopped
1 green pepper diced
6-8 mushrooms sliced
1 stick of butter
salt and pepper to taste

Combine all ingredients but the butter in a large bowl and mix well. Take two large pieces of aluminum foil (appx. 12 inches long) drop two pats of butter on one half of the foil. Spoon half the vegetable mixture on that half of the foil. Top with the other two pats of butter and repeat this process on the other piece of foil with remaining veggies. Fold the foil over and fold all the edges up and make sure they are sealed. Place directly on the grill at a medium heat and let cook on each side for approximately six minutes. Remove from the grill and pour the pouch ingredients into a serving bowl and enjoy. Be careful, these pouches will be hot.

Green Beans & Cherry Tomatoes

2 Cans drained cut green beans
3 pieces of bacon cooked and crumbled
1/2 pint cherry tomatoes halved
1 Tbsp butter
1/2 tsp garlic powder
1/2 tsp sugar
salt and pepper to taste

In a saucepan combine butter, garlic, sugar and salt and pepper over low heat. Once melted add the halved cherry tomatoes and cook for approximately two minutes. Add the green beans, mix well and heat through. Top this off with your crumbled bacon and serve. Everyone will love this!
