Easy to Grab Chicken Legs, Short Ribs, Beer Shrimp Cocktail

Are you having a Superbowl party and wonder dishes would be easy to make, easy to eat and crowd pleasers? Whenever I have a party that is a buffet type dinner, the following are a few dishes I find people really enjoy. I serve these as a buffet and let people eat throughout the game.

Tasty Beer Shrimp Cocktail

3, 16 oz cans of your favorite beer

3 pounds raw shrimp

Salt to taste

Heat beer and salt until boiling. Put in shrimp. Cook for 5 minutes and drain.

Cocktail sauce

½ cup ketchup

3 teaspoons horse radish

2 tablespoons lemon juce

Mix in bowl and serve.

Turkey & Ham Meaty Roll-ups

12 oz swiss cheese

6 ounce sliced turkey lunch meat

16 slices of boiled ham

3 tablespoons flour

1 egg

3 tablespoons of shortening

½ cup bread crumbs

Horseradish dip

Salt and pepper to taste

Cut cheese slices crossways in half. Place slice of cheese and turkey on ham slice and roll up. Secure with toothpicks.

Stir together flours, salt and pepper. Beat egg mixture. Coat meat rolls with flour mixture. Dip in egg.

Melt shortening in skillet and fry meat rolls until brown. Serve warm with toothpicks and horseradish dip.

Antipasto Tray

Various olives

Pickled mushrooms

Green, red and yellow pepper strips

Pickled beats (sliced)

Celery sticks

Radishes

Cherry tomatoes

Artichoke hearts

Hot green peppers

Cauliflower in pieces

Italian Bread

Put on aluminum tray and mix with Italian dressing. Refrigerate overnight. Cut bread into pieces in the morning and serve with antipasto tray and garlic butter.

Handy Short Ribs

2 lbs of beef short ribs cut in pieces so they are easy to grab

2 tablespoons shortening

½ cup water

2 tablespoons horse radish

Salt and pepper to taste

Season meat with salt and pepper. Melt shortening in dutch oven. Brown meat over medium high heat. Drain fat. Pour water and horse radish on meat. Cook in oven at 325 degrees Fahrenheit for 2 ½ hours until meat is tender.

Oven Fried Chicken Legs

3 lbs small easy to pick-up chicken legs

¼ cup shortening

½ cup butter

½ cup flour

1 teaspoon paprika

1 tablespoon mincedgarlic

Salt and pepper to taste

Heat oven to 435 degrees farhrenheit. In skillet, heat up shortening and butter. Mix flour salt, pepper, paprika and garlic. Pour butter mixture over chicken and then coat with flour mixture. Cook uncovered about 45 minutes.

Easy to Make Chili

4 slices of bacon

2 large onions (sliced)

2 cans kidney beans

1 can chili (no beans)

¼ cup sugar

2 teaspoons salt

1 teaspoon minced garlic

This is the easy way to make chili. Fry bacon and dice. Stir in onions. Stir in remaining ingredients and simmer for 30 minutes. Serve with bread.

For dessert serve mixed fruit slices. People may be full, but a slice of melon or pineapple always seems to please. If not, ask someone coming to make a dessert. You can't make everything. Good Luck and may your team win!
