Swedish Apple Cake

This recipe for Swedish Apple Cake comes from my maternal grandmother, who grew up in Dalarna, Sweden and emigrated to the U.S. via Ellis Island. It's an easy recipe and a delicious way to use up fall apples. Choose a tart and slightly firm apple that doesn't disintegrate when cooked such as Granny Smith. This cake has a unique texture and caramel flavor. Enjoy!

5-6 medium apples

1 ½ cups white sugar

½ cup vegetable oil

2 large eggs, well beaten

2 teaspoons vanilla

2 cups all purpose flour

1 ½ teaspoons baking soda

½ teaspoon salt

2 teaspoons cinnamon

Peel and dice apples into 1/2 inch chunks. Measure out 4 cups of apple chunks and use the rest for snacking or another recipe. Toss apple chunks with sugar. Add oil and mix well. Add eggs and vanilla and mix well to combine.

Sift flour, baking soda, salt, and cinnamon together. Add to apple mixture and mix gently until combined.

Pour into a well greased 9 x 13 inch cake pan and bake in a preheated 350 degree oven for about one hour, or until a toothpick inserted in the center of the cake comes out clean. Cool and serve.
