Sweet Chex Mix

I can not eat popcorn or caramel corn and came across this recipe at a graduation party this summer. This recipe with just the cereal and nuts tastes just like caramel corn. Mmmmm!

I don't measure I just estimate.

about 1/2 box Rice Chex cereal
about 1/2 box Corn Chex cereal

1/2 c. butter or margarine
1/2 c. light corn syrup
1 c. brown sugar
1 tsp. backing soda

cook butter, syrup and brown sugar until bubbling around the edges. Remove from the heat and add 1 tsp baking soda to cause the foaming. Pour caramel over cereal and mix until fully covered (at this point you can add peanuts and pretzels if you like) Pour onto a jelly roll sheet and place in 250 degree oven for 45 minutes. stir every 10 minutes.

Remove from the oven and pour on waxed paper. Break a part before it cools. When cooled you can add M&M's. Actually you can add anything that you like such as Cheerios, chocolate chips, etc.

I like to make it just with the corn check and peanuts for the caramel corn taste.
