1 lb boneless, skinless chicken breasts
1/2 cup orange juice
1/4 cup honey
2 tablespoons soy sauce
1 tablespoon cornstarch
1/4 teaspoon ginger
1/2 cup chopped peanuts
2 tablespoons vegetable oil
1 green pepper
1 red pepper
2 carrots
1 cup brocoli

Cut all of your vegetables into thin strips. Cut the chicken into strips or chunks, making the pieces roughly the same size as the vegetables. Combine the honey, ginger, orange juice, cornstarch, and soy sauce in a separate bowl.

Line the bottom of a wok or large skillet with the oil and heat on medium high heat. Add the chicken and stir quickly, moving the chicken until it is cooked through and no longer pink. Pour the chicken onto a plate lined with paper towels.

Pour your chopped vegetables into the pan and cook quickly for 2-3 minutes. You want the vegetables slightly cooked, but still firm on the outside and crunchy on the inside.

Add the chicken back to the pan and stir, mixing the vegetables with the poultry. Toss your chopped peanuts into the stir-fry and cover with your orange juice mixture. Stir the ingredients for another 2-3 minutes until everything is combined and cook through.

Serve the dish over brown or white rice. The sauce drips off the chicken and vegetables, giving the rice a great sweet flavor.
Tip
Omit the peanuts if you have any allergies, or use a different type of nut if you do not like peanuts. The stir-fry tastes great with beef in place of the chicken. Try mixing in different types of vegetables, even using leftovers in place of the fresh vegetables.
