2 14oz cans cooked sliced carrots
1 10oz can of Tomato Soup
1 small chopped sweet onion
1 cup chopped green pepper
1/2 cup of chopped red pepper
1 cup of sugar
1/4 cup of apple cider vinegar
In a medium sauce pan combine Soup, vinegar, sugar and bring to a boil stirring frequently, turn down heat and simmer until sugar is dissolved. Remove from heat. In a medium size casserole dish add Carrots, onion, green pepper and red pepper. Pour soup mixture over the carrots and stir. Heat in oven on 350 just until warmed. Remove from oven, cover and refrigerate until ready to serve. This recipe can be served cold or hot but my family prefers it cold. It is best to refrigerate over night for better taste. If you want to serve it hot just pop it in the oven and heat until warm. If you want it cold just uncover and enjoy!
