Sweet 'N Spicy Peanut Coleslaw

My husband fell in love with our local Armadillo Willy's coleslaw. But I didn't think to imitate it until I tried another coleslaw recipe (Fiesta Coleslaw from AllRecipes.com) that didn't quite measure up to our standards.

That recipe calls for zesty Italian dressing, which wound up making the coleslaw a bit watery. We prefer the creamy texture. So I went to the store bought some creamy Italian dressing. That was better, but it didn't have that sweetness that I like in coleslaw.

The third time proved to be the charm. I combined the Fiesta recipe with my mother-in-law's traditional coleslaw recipe. It was an instant hit not only with my family, but with my party guests. Here's the recipe.

Ingredients

1/2 C. Mayonnaise

1/4 C. Sugar

1/4 C. Vinegar

1/2 tsp. Cayenne pepper

3 Green onions, chopped

1/2 C. Unsalted peanuts

1 Ready-made bag of chopped coleslaw

Preparation

Dump the coleslaw into a large bowl. Add the rest of the ingredients and stir until everything is well coated. Place in refrigerator and let it settle for at least 1 hour.

Stir again, then give it a taste test. If it's too spicy, you can always add more mayo to calm it down a bit.

Makes 6 - 8 servings
