A Breeze to Make Summer Salad Recipes

Properly chilled ham salad is not only a refreshing summer food, especially when the weather gets steamy, it is super fast to prepare and utilizes leftovers as well. This ham salad recipe includes sweet green pepper and celery for extra crunch and bacon bits for a bit of smoky flavor. You will also love the Ramen noodle salad (Oriental Coleslaw) recipe that follows. It is simple to make and a cost-effective potluck or barbecue dish for a crowd.

Sweet Pepper Ham Salad

What You Will Need

2 cups mayonnaise (can use light or fat-free)
1-cup sweet pickle relish
1/4-teaspoon fresh ground pepper
1-teaspoon bacon bits (real or artificial)
1-teaspoon sea salt (optional)
6 cups ham - finely diced
1 medium onion - finely diced
1 small green Bell pepper - (seeds and core removed) finely diced
2 stalks celery - washed, finely diced (roughly 2 cups)

In a mixing bowl, blend mayonnaise, relish, bacon bits, salt and pepper. Add remaining ingredients and mix gently. Refrigerate for several hours. Serve on fresh, crisp iceberg lettuce with cherry tomatoes or on whole-wheat rolls.

Ramen Noodle Salad (AKA/Oriental Coleslaw)

What You Will Need

1 small green cabbage - chopped
3 green onions - chopped
1 carrot - shredded
1 package Ramen Noodles - Oriental Flavored
3 tablespoons sesame seeds

The Dressing

½-cup salad oil
2 tablespoons balsamic vinegar
2 tablespoons sugar (can use sugar substitute)
¼-teaspoon sea salt
½-teaspoon fresh ground pepper
Oriental flavor pack from noodles

Blend all ingredients in a cruet or whisk in bowl

Salad Directions

In a preheated (250-degree) oven, lightly toast sesame seeds for about 5 minutes. Combine cabbage, onions and carrot in a bowl. Break up the Ramen noodles and mix gently into vegies. When ready to serve, add the sesame seeds and dressing and toss until blended.

    Both nice salads - but I'd need to reduce the portion to suit 2. No problem Cathy. I don't know what Ramen noodles are - being an Aussie. I am sure there is an equivalent here.
