Sweet potato casserole is a Thanksgiving favorite. We have sweet potato casserole every year. As a working mom, you know I like my recipes hot, fresh and quick with plenty of flavor. Here is a quickie sweet potato casserole that is sure to please all your guests:

Mamasaid's Quickie Sweet Potato Casserole

Large can of Princella cut sweet potatoes in light syrup

Small can of mandarin oranges in juice

Mini marshmallows (or marshmallow Fluff in a pinch)

Pecans or other chopped nuts of your choice

Empty the can of sweet potatoes with syrup and the mandarin oranges with juice in a casserole dish or baking dish with sides. Pour mini marshmallows over the top (I used Fluff in a pinch, not quite as good but does the job alright). Bake for about 20 minutes in a 350 degree oven. Remove and sprinkle nuts over the top to make your fast sweet potato casserole look fancy. Who knew you could be a star with so little work?

Usually this sweet potato casserole serves up to 6 guests. Just double or triple the recipe to serve a larger hungry crew. It might look a bit messy, but it tastes delicious!
