Sweet Potato Pancakes
Makes about 12- 4 inch pancakes
1 Cup self-rising flour
2 Tlb brown sugar
1/4 tsp cinnamon
1/4 tsp fresh ground nutmeg
1 Cup evaporated milk
1 egg, separated
1/2 Cup mashed sweet potato
2 Tlb butter, melted
1/2 tsp vanilla extract
Sift flour with spices, stir in sugar. Mix egg white with milk and vanilla. In separate bowl mix yolk with cooled butter add sweet potato and milk mixture. Stir in flour and spices, add more milk to desired consistency. Pour onto hot griddle, cook until edges are dry then flip. Serve hot with butter and maple syrup. Enjoy!
