3 c. sweet potatoes, cooked and mashed
1 c. granulated sugar
2 eggs, beaten
1 stick margarine, softened
1/2 c. milk
1/2 tsp. vanilla extract
Combine all the ingredients together in a large mixing bowl. Mix well and pour into a 9x13-in baking dish that has been sprayed with Butter Flavor Pam.
Topping
1 c. brown sugar, lightly packed
1/2 c. self-rising flour, sifted
1 c. chopped pecans
1 stick margarine, melted
Mix all the ingredients together and pour on top of sweet potato pudding. Bake at 375 degrees for 30 minutes or until lightly browned.
