Sweet and Sour Apple Beets

Sweet but Sugarless - Great for Diabetics

For convenience, I use canned beets but feel free to use fresh beets. You will have to cook, peel and chop them first before using them for the recipe. If you do use fresh beets, add 1/2 - 1 teaspoon of salt to recipe. I have found that sweet apples work best and eliminates the need for added sugar. This is a great recipe for diabetics.

Sweet and Sour Apple Beets

1 can (15 oz) beets, chopped

1 ¾ cup peeled and chopped apple

¼ to ½ cup chopped onion

¼ to ½ teaspoon cinnamon

Generous sprinkle of nutmeg

1-2 tablespoons butter or margarine

Preheat oven to 325°

Combine all ingredients except butter. Put into a greased casserole. Dot with butter. Cover and bake for 45 minutes to an hour. Stir before serving.

Yield: 4 servings

    I've never heard of such a thing! This sounds very interesting. It's good to see there is no artificial sweetener. Of course beets and apples both contain a natural amount of their own sugars, so why add any? A good idea.
