Sweet and Tangy Glazed Salmon Fillets

2 large salmon fillets
1 tbsp spicy brown mustard
1/4 cup brown sugar
1 tbsp lemon juice
2 tbsp olive oil, divided

Preheat oven to 425 degrees F. Thaw the salmon fillets if necessary and pat dry with paper towels. Line a pan with aluminum foil for easy clean-up and coat the foil with one tbsp of the olive oil. Place the salmon fillets on the foil-lined baking sheet, turning to coat the fillets on both sides with the olive oil.

Mix together the mustard, brown sugar, lemon juice and remaining 1 tbsp olive oil in a small bowl. Brush about half of the glaze on the side of the fillets facing up. Place in the oven and bake for approximately 15 to 20 minutes.

Remove the fillets and baste with the remaining glaze. You can turn the fillets over at this point if you prefer, but I don't find it a necessary step. I've tried it both ways and my fillets always taste just as delicious and cook evenly without turning. Place the salmon fillets back in the oven and turn the oven to broil. Broil on high for an additional five minutes or until the glaze is bubbling and lightly browned.
