Make Homemade Candies for Valentine's Day

Caramels

2 pounds Brown sugar (light)
1 pint light corn syrup
1 can sweetened condensed milk
1 pound oleo

You will need a: candy thermometer

Cook all of the ingredients over medium heat until the candy thermometer temperature reaches 240 degrees.

Stir until thick. Cool, cut and wrap.

You can wrap the caramels in saran wrap or wax paper. For Valentine's day use the red colored saran wrap. Or you can pick up little bags usually in the cake decorating section of your craft store.

Fudge

3 cups chocolate chips
1 can sweetened condensed milk
1 can Spanish peanuts or walnuts

Butter an 8 x 10 inch pan. Then melt the chocolate chips in a double boiler (if you don't have a double boiler use 2 different size kettles. Fill the larger kettle with water (about 1/2 way - bring to a boil)) Then put chocolate chips in smaller kettle, turn the heat down to low and set the kettle with chocolate chips on top of the water, let it sit on top of the water (keeping and eye on it) until the chips melt.

When the chocolate chips are melted, remove from the heat and add the sweetened condensed milk and nuts. Pour into the pan. Let cool. Once cooled cut into squares or for Valentine's Day use a buttered heart shape cookie cutter. You then can wrap each piece of fudge.

Peanut Butter Fudge

2 c. sugar
1 c. milk
1 c. brown sugar
2 Tbsp. butter
2 c. peanut butter
2 tsp. vanilla

In a kettle mix together the milk, sugar and brown sugar, cooking until the mixture reaches the soft ball stage (use a candy thermometer - or drop a small amount of the mixture in a glass of cold water. It should form a ball. Pick up that ball and squeeze it lightly, if it is ready the ball will be soft not hard, if hard you cooked it too long). Remove from the heat, and add the peanut butter, butter and vanilla. Beat until it thickens. Pour into a buttered pan. Let cool, once cooled cut into squares or a heart. You can wrap for Valentine's Day if you like. Makes approximately 2 1/2 pounds (if you don't want to make this much fudge, then cut the amount of ingredients in half.

Toffee

1 c. butter
1 c. sugar
1 c. slivered almonds
1 c. chocolate chips
1 c. chopped nuts

Cook sugar, butter and slivered almonds over medium heat till dark brown. Spread in a buttered 9 x 13 inch pan. Cover with nuts and chocolate chips. Cool. Once cooled crack into pieces.

For Valentine's day use some red or white netting fabric to make little bundles of candies. Cut the netting into and 8 inch circle. Lay the circle flat and top with a few pieces of toffee, then pull up all sides and tie with a ribbon.
