This months of the year are a time for outdoors, grilling, and quick food that doesn't take a lot of time to prepare in the heat! Summer is a great time for home recipes that you may not remember. Summer is also a time of bright, fresh local flavor. Your local grocers and markets will be busting with seasonal local produce, so this is a great time to give your cooking a taste of home made recipes.
I've put together some recipes for an easy, flavorful, summery meal with the taste of home.
Asian Garden Salad
1 med. zucchini, cut in cubes
2 cups cherry tomatoes, halved
1 spring onion, chopped
1 cup celery, chopped
1 green pepper, chopped
1 cup toasted almonds
1/2 c. fresh cilantro, chopped
Dressing:
1/4 cup rice wine vinegar
1/2 cup vegetable oil
2 tablespoons soy sauce
2 tablespoons sugar
1 tablespoon sesame oil
1 tablespoon sesame seeds
2 teaspoons grated fresh ginger
Mix dressing ingredients in a bowl. Chop vegetables and cilantro, place in another bowl, omitting the almonds. Mix with dressing, and let salad marinate in the refrigerator for at least 4 hours. Before serving, mix in the almonds.
Chicken and Spinach Grilled Pizza
1 ready-made pizza dough (or you can make it from scratch)
1 1/2 cups tomato sauce
2 tablespoons Parmesan cheese
1 cup. Mozzarella cheese
2 chicken breasts
1 ½ cups fresh spinach (lightly packed, don't crush it)
1 tablespoon olive oil
1 teaspoon minced garlic
1/4 teaspoon garlic powder
1/2 teaspoon Italian seasoning
Warm up your grill or barbeque. Baste the chicken with olive oil and sprinkle with garlic powder. Grill on high heat, cooking chicken evenly on both sides. Let cool, then slice thinly.
Mix the minced garlic and Italian seasoning in the tomato sauce. Roll out pizza dough to desired size, and place on the flat side of the pan (the bottom, the side without edges). Spread tomato sauce onto the dough, then sprinkle Parmesan, spinach, chicken, and top with Mozzarella.
Slide the pizza off your pan onto the grill. Cook for around 12 to 15 minutes, keeping a close eye on the dough.
Banana Split Ice Cream
4 ripe bananas
2 cups frozen strawberries
1 can chunk pineapple
3/4 cup chopped pecans
5 cups milk
2 cups half and half
1 can sweetened condensed milk
3/4 teaspoon vanilla
Juice of one lime
Chocolate syrup and maraschino cherries to finish
Mash 3 of the bananas and cute the last one into round slices. Put in a bowl with the juice of one lime. Add the vanilla, milk, half and half, and sweetened condensed milk. Then add the pineapple and its juice, frozen strawberries and pecans. Prepare in ice cream maker, freeze at least one hour. Serve and top with chocolate syrup and maraschino cherries.
